Yum! I usually make a sweet potato dish that’s VERY similar to this (just steamed and mashed sweet potatoes, eggs, some oil and any seasonings you like). I’ll try this recipe this Pesach I’m sure it’s equally delicious!

Hope you like this recipe. I imagine it will be similar but perhaps lighter due to butternut squash vs sweet potato

Sounds great, although I generally avoid coconut oil due to the high saturated fat content. Would avocado oil or some other Pesach-friendly oil work as a replacement for the coconut oil?

Hi Alan, I think avocado oil would work because you can bake with it and its neutral tasting. If you make it with avocado oil, please let me know how it turns out.
