Ingredients:
½ cup coconut oil, at room temperature
¼ cup brown sugar
1 large egg
¼ cup + 2 tablespoons raw honey
1 teaspoon vanilla extract
2 cups all purpose flour
1 tablespoon cornstarch (or potato/arrowroot starch)
¼ teaspoon cinnamon
A pinch of salt
Tools:
Rimmed baking sheet
Parchment paper
Measuring cups and spoons
Large bowl
Instructions:
Preheat the oven to 350 degrees F and line a rimmed baking sheet with a piece of parchment paper.
In a large bowl, whisk together the coconut oil and brown sugar until fluffy, around 2-3 minutes.
Add in the egg, honey, and vanilla; whisk until smooth and creamy.
Gently fold in the flour, cornstarch, cinnamon, and salt. Continue mixing just until the flour is incorporated and the mix reaches a smooth consistency.
If the dough is too warm to work with, place in the fridge for 15-20 minutes.
Roll out the dough into small balls - you should get around 24-25 cookies.
Place the cookie dough balls onto the prepared baking sheet and bake until lightly golden, around 12-15 minutes.
