Blintz Makeover: Low-Carb, Cheesecake-Inspired Delight

Shavuot is a holiday traditionally marked by eating dairy foods, with recipes like cheesecake and blintzes being popular. However, these classic dishes often don’t meet our modern dietary needs, so here’s a recipe makeover for blintzes. Last year, I shared a Shavuot "revenge" cheesecake recipe because I was frustrated with the same old, sugar-laden cheesecake versions.
This low-carb berry and cream cheese blintz recipe is a perfect example of how we can enjoy the same delicious flavors of Shavuot while making them healthier. These blintzes feature a soft, nutty almond flour base and a creamy, tangy filling reminiscent of cheesecake. Sweetened with erythritol or your preferred sugar replacement, like allulose, they’re customizable and satisfyingly sweet without the carbs. You can easily swap in different sugar-free berry jams—like raspberry, blueberry, or blackberry—depending on your preference. It’s a delicious way to enjoy the comfort of a traditional dairy dish while making it work for today’s dietary needs.
Ingredients:
2 large eggs
¼ cup cottage cheese
2 tablespoons milk of choice
½ cup almond flour
1 teaspoon coconut oil or butter
½ cup cream cheese, room temperature
¼ cup Greek yogurt
2-3 tablespoons (erythritol, allulose or stevia)
teaspoon vanilla extract
2-3 tablespoons sugar-free berry jam
Tools:
A blender
A crepe pan
Casserole dish
Medium bowl
Measuring cups and spoons
Instructions:
In a blender, combine eggs, cottage cheese, milk, and almond flour. Blend until completely smooth and creamy.
Melt the coconut oil or butter in a crepe pan over medium heat. Allow the pan to get hot before pouring in the first addition of blintz batter.
Pour 2-3 tablespoons of the blintz batter into the hot pan and swirl around to coat the surface of the pan. Cook until the surface of the blintz looks dried, then flip using a spatula and cook for another minute. Repeat with the remaining batter - you should get around 3-4 blintzes.
Place the blintzes on a plate and cover with a clean kitchen towel.
Preheat the oven to 400 degrees F.
In a medium bowl, whisk together the cream cheese, Greek yogurt, erythritol, and vanilla extract until smooth and creamy.
Add a dollop of the cream cheese mixture in the center of each blintz and roll tightly like a burrito. Transfer into a casserole dish and repeat with all blintzes.
Bake until the blintzes are lightly golden and bubbly, around 15-20 minutes.
Remove from the oven and allow to cool for 10 minutes, then drizzle with strawberry jam and serve while hot. Enjoy!
