A Note on Sesame Seeds: Some Ashkenazi Jews avoid sesame seeds on Passover because they are considered kitniyot (legumes), while Sephardic traditions typically allow them. If you need a stricter version, swap the sesame seeds for crushed nuts or a sprinkle of kosher-for-Passover salt.

Bagel Bites
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
Yield: 8-10 bagel bites
Ingredients:
1 cup + 2 tablespoons fine almond flour
¼ teaspoon salt
½ cup Greek yogurt
2 tablespoons sesame seeds
1 tablespoon black sesame seeds
Tools:
Mixing bowl
Small bowl
Parchment paper
Measuring cups and spoons
Rimmed baking sheet
Instructions:
Preheat the oven to 400 degrees F and line a rimmed baking sheet with a piece of parchment paper.
In a mixing bowl, combine the almond flour, salt, and Greek yogurt. Mix with a spoon and then with your hands until a mostly smooth, shaggy dough forms.
Mix the sesame seeds in a small bowl.
Using lightly oiled hands, form the dough into small balls and roll in the sesame seeds until well-coated on all sides. You should get around 8-10 balls.
Bake in the preheated oven until nicely golden on all sides, around 16-20 minutes.
Allow to cool for 10 minutes before serving. Enjoy!
You can serve these bagel bites warm straight out of the oven, or store them in a lidded container in the fridge for 3-5 days to have on hand throughout the week. You can serve them with additional proteins like cottage cheese, eggs, avocado, nut butter and fresh green leaves. However, as they are so protein-packed, they are great to enjoy as-is for a quick snack or breakfast.
